Mascarpone is an Italian cream cheese. What is its opposite?
Mascarpone, like all Italian cream cheeses, falls into that category of what dairy workers call “Supine Forgotta”, a somewhat nonsense term translated into English as “Upside-Down Memory Loss”. An individual who suffers from Supine Forgotta finds that memories of cream cheese are flipped over a perfect 180° and left in that position until they inevitably start to melt. The drippings from this upside-down cream cheese land on memories which are still right-side-up, creating a soupy, viscous material that is mascarpone’s opposite.
